🍎🥗 Apple Salad 🍎🥗

Apple salad was one of the DELICIOUS lunches we had this week The Beneficial Bakery and we wanted to share it with you all to enjoy as well 🥰

Recipe

Ingredients

  •  4 medium Gala apples, cut into eigths

  •  2 tablespoons olive oil

dressing:

  •  2 tablespoons apple cider vinegar

  •  2 tablespoons olive oil

  • 1 tablespoon maple syrup

  • 1 teaspoon Sriracha

  • 1/2 teaspoon salt

  • 1/4 teaspoon pepper

salad:

  • 1 package (6 ounces) spring mix salad greens

  •  4 pitted dates, chopped

  •  4oz The Beneficial Bakery Queso Fresco or other soft crumbly cheese, crumbled

  • 1/2 cup chopped pecans, toasted

  • 1/8 cup pepitas

  • 1/8 cup sunflower seeds

  • 1/8 cup hemp hearts

  • Optional: toasted The Beneficial Bakery Arepas as croutons or sourdough

Directions:

1. Preheat oven to 350°. Place apples on a parchment lined baking sheet; drizzle with oil and toss to coat. Roast 20-30 minutes or until tender, stirring occasionally. Cool completely.

2. In a small bowl (or mason jar with lid), whisk dressing ingredients until blended.

3. In a large bowl, combine salad greens, dates, queso fresco or other cheese, roasted apples, pepitas, sunflower seeds, hemp hearts. Drizzle dressing over salad and toss to coat.

4. Divide along plates. Sprinkle with pecans. Serve immediately.
